Dopo la meringata al limone, ecco un altro dolce citato nella serie Desperate Housewifes, su cui, ancora una volta, Bree e Katerine si sfidano mettendo alla prova le proprie abilità!

Se volete cimentarvi in queste feste con un dolce scenografico e di sicuro successo, il croquenbuche vi darà grandi soddisfazioni. Letteralmente il suo nome significa “che crocca in bocca” ed il croccante è dato dal caramello con cui i bignè (solitamente alla crema) vengono glassati e di cui sono fatti i filamenti tipici della decorazione di questo dolce. Viene solitamente presentato a forma di cono, come se fosse un albero di natale fatto d’oro.Il mio non è venuto perfetto, era più un esperimento per il pranzo di natale ma vi garantisco che è buonissimo!!!
Should you want to surprise your guests during Christmas time the Croquenbuche is the right dessert! Literally his name means “crunch in mouth” and it is due to the caramel upon the puffs and alla around the “pyramid” as golden strings.
Ho farcito i bignè con una crema aromatizzata al cointreau, le cui note amare bilanciano perfettamente il dolce del caramello, di cui vi lascio la ricetta completa. La dose è abbondante, basta per circa 40 bignè, se ve ne avanza potete congelarla e utilizzarla successivamente.
I filled the puffs with cointreau custard, which bitter taste well combine with the sweetness of the caramel. You can find below the recipe. Should there will be some custard left you can store it into the freezer for some weeks.
L’unica difficoltà di questo dolce sta nel preparare il caramello. A me è riuscito al terzo tentativo! Come sempre cercherò di trasmettervi quello che ho imparato (a mie spese!).
The only difficult you will face with this dessert is the caramel!!! I get it at the third attempt and will give you some hint!
Il Croquembuche non è un dolce che va preparato molto in anticipo, il caramello in frigo tende ad inumidirsi e quindi ad afflosciarsi e in freezer patirebbe del tutto. Per portarvi avanti con la preparazione potete preparare il giorno prima la crema ed i bignè (se li riempite congelateli, altrimenti farciteli al momento) ed assemblare il dolce una o due ore prima dell’arrivo dei vostri ospiti.
Please note that you can’t prepare the croquembuche in advance: into the fridge the caramell would dissolve. You can prepare in advance the puffs and the custard, and finalize your dessert few hours before your guests will arrive.
Ingredienti per 6/8 persone (ingredients for 6/8 serving) :

circa 25/30 bignè (qui la ricetta) – 25/30 puff (here is the recipe)
Per la crema pasticcera al cointreau (for the coiuntreau custard) -
1 lit. di latte (1 liter milk)
-
200g zucchero (200g sugar)
-
30g amido di mais (30g corn-starch)
-
40g farina 00 (40g all pourpose flour)
-
4 tuorli e 2 uova (4 yolks and two eggs)
-
80g cioccolato bianco (80g white chocolate)
-
2/3 cucchiai di cointreau (2/3 tablespoon cointreau or grand marnier)
Per il caramello (for the caramel) -
150g zucchero (150g sugar)
-
50g acqua (50g water)
-
75g sciroppo di glucosio (75g glucose syrup)
Procedimento – Directions:

Preparare la crema pasticcera: portare a bollore il latte. Nel frattempo sbattere le uova con lo zucchero e la farina con una frusta sino ad ottenere un composto liscio e aerato. Versare il composto nel latte quando bolle e mescolare con cura (si addenserà in un paio di minuti). Spegnere il fuoco e raffreddare in un bagno di acqua e ghiaccio, coprendo la crema con pellicola a contatto (=stesa direttamente a contatto con la crema, in questo modo non farà la pellicina).(Prepare the custard: let the milk boil. In the meantime melt the eggs with the sugar and the flour. When the milk boils, pour the mixture into it and carefully stir it until thiken. Cover with a film and let it cool down.)

Quando la crema è fredda, farcire i bignè aiutandovi con una siringa da pasticceria. (When the custard is cool, fill the puffs)

Preparare il caramello: sciogliere nell’acqua calda lo sciroppo do glucosio e quindi lo zucchero, versato tutto in una volta. Lasciar cuocere a fiamma abbastanza alta sino a che non avrà raggiunto un colore biondo scuro.
Importante: non mescolate!!! si cristallizzerebbe e il caramello non si formerà più. Al massimo se volete mescolare il liquido, afferrate la padella per il manici e date un movimento rotatorio.
Attenzione a non cuocerlo troppo: diventa amaro. Attenzione anche a spegnere con qualche istante di anticipo sul colore desiderato: le pentole, specie se con il fondo spesso, continuano a rilasciare calore ( e a cuocere) anche quando il fornello è stato spento! Il mio primo caramello è diventato troppo scuro e amaro per questo motivo!!!
(Prepare the caramel: dissolve the glucose syrup and the sugar into the water into a soucepan and boil until it will be golden.
Important: do not stir it! It would crystallize and the caramel will never came out!! Be careful: shoul you not stop in time the heat, it would burn and be bitter.) -
Lasciar riposare il caramello appena un minuto, perché acquisti una consistenza fluida, quindi glassare la punta dei bignè immergendoli nel caramello (come nel video).
Attenzione: BRUCIA! è oltre i 150°. Cercate di non toccarlo con le dita. Sistemare i bignè in cerchio sul piatto da portata e poi via via costruire una piramide (meglio bassina le prime volte): il caramello servirà ad incollare i bignè. (Let the caramel rest for one or two minutes and then ice the filled puffs with it – see the video. Be careful: it is very very hot! Put the puffs into the serving dish and shape a pyramid: the caramel will work as a glue!) -
Immergere due forchette nel caramello e… fate come spiegato nel video, non so davvero come rendere con le parole questa procedura!!!! XD

Vi ricordo che il Croquembuche non deve essere preparato con largo anticipo perché non può essere tenuto per troppe ore in frigo perché l’umidità fa sciogliere i fili. Meglio sistemarlo in veranda al fresco (in inverno) in attesa che la cena termini e possiate fare il vostro ingresso trionfale!!!
