Oggi vi do l’anteprima del dolce (uno dei dolci) che preparerò per l’ultimo dell’anno. Apparentemente un semplicissimo tiramisù, nella sostanza un tiramisù a base di meringa con i sapori del torrone, che con il caffè, sposa benissimo: un tiramisù torronato, appunto!
Today recipe is the dessert I’m going to bring to my friends for the New Year’s Eve. It looks like a simple Tiramisù, but actually is a Tiramisù made with italian meringue and tasting as a nougat! And the nougat with the coffe is really delicious!
Ancora una volta la fonte è il Maestro Montersino (anche se io lo presenterò in una versione semplificata). Mi rendo conto di essermi quasi fossilizzata sulle sue ricette ultimamente, e mi sembra quasi di fare un torto alle miriadi di altre ricette altrettanto valide che ho per casa. Ma son fatta così… vado a periodi e tra poche ore si aprirà il periodo “dieta” (spero”!), siete avvisati!!!
Again I used a Master Montersino recipe (but served in a different way). I know I am in a “montersino loop” now! And I feel like I ignore the other thousand great books I have in my shelf… But this is me! This is my Montersino’s period, and, guess what, my diet period is coming soon (I hope!).
La dose che vi do è per 8 persone, se la notte di capodanno avrete più ospiti basterà raddoppiare le dosi (o quadruplicarle!!!). Servendolo in bicchierini come in foto, potreste ottenere anche 12 monoporzioni, in questo caso però vi consiglio sia di diminuire la dose di gelatina (anzi potreste anche non metterla), sia di servirlo insieme ad altri mignon per soddisfare anche i più golosi ed insaziabili ospiti! Senza la gelatina può anche essere servito come semifreddo (a temperatura di freezer), la presenza della meringa, infatti, lascerà una consistenza “morbida” anche al prodotto congelato.
The recipe is for 8 servings. Should you have more guest you have only todouble (or quadruple!!) it. Should you serve it into some verrines (as per the photo) the recipe is enough for about 12 small glasses and you won’t use the isinglass. BTW I suggest you to serve it with other mignon pastry for the greediest guests!!!!
Noterete che negli ingredienti non c’è il torrone, ma ci sono gli ingredienti che lo compongono: meringa, miele, nocciole. Io ho aggiunto anche un po’ di amaretto perché il sapore dell’albume mi sembrava troppo invadente. Il risultato è stato davvero stupefacente. L’esecuzione è molto semplice, l’unica difficoltà (oltretutto non insormontabile) è nella preparazione della meringa. L’unico dubbio che avevo riguardava l’eventualità che il miele potesse sentirsi troppo e diventare invasivo. Invece vi assicuro che non c’è assolutamente questo rischio, la ricetta è perfettamente bilanciata.
You will notice that there is not nougat in the ingredients list. But there are the nougat’s ingredients! Meringue, honey, nuts… I added also almond liqueur (=amaretto) and it taste very very very very good! The proceeding is very simple, the only “hitch” (very small hitch) is to prepare the meringue. Should you are wondering whether the honey flavour could be too strong, I just want to say you that the recipe is perfectly balanced and very delicious.

Ingredienti per 8 persone :
- 75g albumi (circa due albumi piccoli) (75g glairs = two small glairs)
- 220g miele (220g honey)
- 10g colla di pesce in fogli (10g isinglass) – N.B. Se lo servite in coppa o in bicchiere, invece che in tranci, la gelatina può essere omessa (Should you serve it in glasses or in cups, and not in slices, you can omit the isinglass).
- 250g panna montata (250g wipped cream)
- 250g mascarpone (250g mascarpone cheese)
- 100g nocciole tostate (o altra frutta secca) (100g toasted hazelnuts)
- 1 cucchiaio di amaretto (1 tbs almond liqueur)
- 20 savoiardi (150/200g biscuits)
- 4 tazzine di caffè ristretto zuccherato a piacere (4 coffee-cup espresso )
- cacao (cocoa)
Procedimento:

Ammollare la gelatina. (Soak the isinglass into cold water)

Portare ad ebollizione il miele fino a raggiungere 121°. Nel frattempo cominciare a montare gli albumi. (Boil the honey until 250°F and start whipping the glairs).

Quando il miele è alla giusta temperatura, attendere che la schiuma di cottura svanisca, quindi versare il miele a filo sugli albumi con le fruste al minimo. Unire la gelatina ben strizzata e continuare a montare alla massima velocità fino a raffreddamento. (When the honey is at the right temperature, let the foam vanish, then add it to the glairs, add also the isinglass, and continue whipping them until cold).

Ridurre le nocciole tostate in granella grossa. Montare la panna con il mascarpone (attenzione montano molto in fretta insieme) e unirla alla meringa al miele raffreddata. Unire infine le nocciole e l’amaretto. (Cut the hazelnuts in gross grain. Whip the cream with the mascarpone cheese – it needs very few minutes- and melt it with the meringue and the nuts.)

Inzuppare i savoiardi nel caffè e formare uno strato nel piatto da portata. Versare la crema in uno strato uniforme, quindi spolverare di cacao (per la presentazione di Montersino potete vedere questo video). (Dip the biscuits into the coffee and put them on the bottom of the serving dish. Pour the cream upon the biscuits and decorate with cocoa and hazelnuts).
Insomma abbastanza semplice no? Basta un termometro ed è fatta!!! ;D
So… very simple, isn’t it?! All you need is a cooking thermometer!!!
